APPLE PANCAKES WITH BROWN SUGAR & CINNAMON

About the Recipe

Ingredients

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 teaspoon ground cinnamon

  • pinch ground nutmeg

  • pinch ground cloves

  • 2 tablespoons brown sugar

  • 1 tablespoon unsalted butter , melted & cooled

  • 1 large egg

  • 1 tsp vanilla extract

  • ¾ cup milk (or 1 cup for thinner pancakes

  • 1 cup shredded apple , about 1 large or 2 small apples

Preparation

  • In a large bowl whisk together the flour, baking powder, baking soda, cinnamon, nutmeg & cloves

  • In a second medium bowl whisk together the brown sugar, melted butter, egg, vanilla and milk.

  • Fold the wet ingredients into the dry using a rubber spatula or wooden spoon. Then fold in the shredded apple.

  • Heat a griddle to 350F or a frying pan to medium heat. Grease lightly with cookie oil.

  • Pour about ¼ cup of the batter onto the griddle/frying pan per pancake. Cook for 2-3 minutes or until you see small bubble form on the uncooked side. Flip and cook on the other side for 2-3 minutes.

  • Test the batter to make sure it's to your liking.  I added a little more this and that of the sugar and cinnamon to the batter.  I loved the apple pancake and will be making them again!
