About the Recipe

Ingredients
1 cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 teaspoon ground cinnamon
pinch ground nutmeg
pinch ground cloves
2 tablespoons brown sugar
1 tablespoon unsalted butter , melted & cooled
1 large egg
1 tsp vanilla extract
¾ cup milk (or 1 cup for thinner pancakes
1 cup shredded apple , about 1 large or 2 small apples
Preparation
In a large bowl whisk together the flour, baking powder, baking soda, cinnamon, nutmeg & cloves
In a second medium bowl whisk together the brown sugar, melted butter, egg, vanilla and milk.
Fold the wet ingredients into the dry using a rubber spatula or wooden spoon. Then fold in the shredded apple.
Heat a griddle to 350F or a frying pan to medium heat. Grease lightly with cookie oil.
Pour about ¼ cup of the batter onto the griddle/frying pan per pancake. Cook for 2-3 minutes or until you see small bubble form on the uncooked side. Flip and cook on the other side for 2-3 minutes.
Test the batter to make sure it's to your liking. I added a little more this and that of the sugar and cinnamon to the batter. I loved the apple pancake and will be making them again!
