How to Oven-Dry Tomatoes Perfectly
Follow these simple steps to dry tomatoes in the oven:
First, slice the tomatoes and pat them dry
Sprinkle salt generously over them
Place on a rimmed baking sheet and set in a 225 degree Fahrenheit oven for 5-6 hours. If you have a dehydrate setting they will take less time.
Check the tomatoes frequently to ensure that they are drying evenly. Remove any that appear to be drying faster than the others to prevent them from becoming burnt.
Once all the tomatoes have become dried, dark red and wrinkled, remove the pan from the oven.
Allow the tomatoes to cool completely before storing them. You can either keep them in a plastic bag in the refrigerator, or in a glass jar with approximately 3-4 tablespoons of olive oil.
These dried tomatoes can be safely stored for about a month in the refrigerator. This recipe yields about 1 cup of dried tomatoes.
