About the Recipe

Creating oven-dried tomatoes is a simple task you can do at home! These tomatoes are packed with flavor and add a tangy zest to your meals.

  • 4 cups cherry tomatoes

  • ▢1 teaspoon sea salt

  • ▢olive oil for storing if desired optional

How to Oven-Dry Tomatoes Perfectly
Follow these simple steps to dry tomatoes in the oven:

  • First, slice the tomatoes and pat them dry

  • Sprinkle salt generously over them

  • Place on a rimmed baking sheet and set in a 225 degree Fahrenheit oven for 5-6 hours.  If you have a dehydrate setting they will take less time.

  • Check the tomatoes frequently to ensure that they are drying evenly. Remove any that appear to be drying faster than the others to prevent them from becoming burnt.

  • Once all the tomatoes have become dried, dark red and wrinkled, remove the pan from the oven.

  • Allow the tomatoes to cool completely before storing them. You can either keep them in a plastic bag in the refrigerator, or in a glass jar with approximately 3-4 tablespoons of olive oil.

  • These dried tomatoes can be safely stored for about a month in the refrigerator. This recipe yields about 1 cup of dried tomatoes.
