An Effortlessly Delightful White Wine Sauce Recipe for Pasta, Seafood, and Chicken Dishes
This white wine sauce is bursting with fresh, vibrant flavors and is incredibly simple to make. It's the ideal accompaniment for pasta, seafood, and chicken dishes, and has a light and refreshing taste.

Ingredients

WHITE WINE SAUCE:

  • 2 teaspoons minced garlic

  • ¼ cup olive oil

  • 5 tablespoons butter

  • ½ teaspoon crushed red pepper

  • 1 teaspoon salt

  • ½ teaspoon pepper fresh ground

  • ½ cup white wine

  • 1 TBLS of lemon juice (optional)

PASTA (OPTIONAL)

  • 1 pound pasta

  • ½ cup parsley for garnishing

  • ½ cup parmesan fresh grated

SEAFOOD:

  • Raw Large or Jumbo Shrimp

  • Sea Scallops




Preparation

Instructions for White Wine Sauce:

  • In a large saucepan, heat olive oil over medium heat. Add garlic and red pepper, and sauté until golden brown, about a minute.

  • Add salt, pepper, white wine, and butter. Stir for 2 minutes, then remove from heat.

  • Toss the sauce with cooked pasta and your choice of protein (chicken, scallops or shrimp).


Cooking Perfect Scallops & Shrimp:

  • Preheat a pan over high heat and add a tablespoon of oil. While the pan is heating up, dry the scallops and shrimp with kitchen paper and season them well.

  • Once the pan is hot, add the scallops and shrimp to the pan, flat side down. Allow them to cook for 2-3 minutes, or until they turn golden brown. Avoid moving the scallops around in the pan, as this can hinder the cooking process.

  • Turn the scallops over and cook for an additional 1-2 minutes.

  • Add a dab of butter to the pan and baste the scallops and shrimp with it.

  • Remove  from the pan and serve immediately. The scallops should be springy to the touch and warm in the center.

For the pasta:

  1. Bring a pot of water to a boil and cook noodles al dente.

  2. Garnish with parsley and fresh grated parmesan.
